  Creamy Chicken Alfredo Pasta| Homemade Cheesy Chicken Alfredo Recipe

It's a pasta bake day today and I'm making this Creamy Chicken Alfredo Pasta bake.  Welcome back to our blog where we show you how to make delicious family-friendly recipes. We love pasta bakes in our house and this creamy chicken pasta Alfredo baked is no exception. I've got the oven preheating to 190 C or 375 F and a big pan of water coming to the boil we're gonna start by par cooking the pasta. I've got 400 grams or 14 ounces of dried pasta, add that to the pot of boiling water you want to cook that for about a minute less than the time on the packet for this pasta that about 10 minutes.

Whilst the pasta is cooking heat 2 tbsps of olive oil on medium heat in a large frying pan. Add a finely diced onion to the pan and cook for 4 to 5 minutes stirring occasionally until the onion softens. Add230 grams which are about half a pound but baby chestnut mushrooms have been sliced in half then half a teaspoon each of salt and pepper and two cloves of minced garlic, cook for a further three to four minutes stirring often until the mushrooms are tender. 

Next in goes a hundred and twenty mills for a half a cup of white wine. Turn up the heat to high and allow the wide support for a few minutes until reduced by half then turn the heat back down to medium and add 120 ml or half a cup of chicken stock. Now we're going to add 240 mils or a cup of double or heavy cream, 2 cooked chicken breasts that have been shredded, and 50 grams or half a cup of grated Parmesan cheese. Stir together until all combined and the cheese melts. 

By now that pasta should be cooked so we're going to drain it over a colander and then we'll add the drained pasta into the pan and stir together until the pasta is coated in that delicious creamy sauce. Transfer the contents of the pan to a large baking dish. Then sprinkle on 50 grams or half a cup each of grated Parmesan, Cheddar, and mozzarella and place in the oven for 20to 25 minutes until the cheese is golden brown.
